Properties
Transparent crystals, granules. Deliquescent
in moist air. Neutral or slightly alkaline reaction to litmus. One
gram dissolves in ≈1 ml water, in ≈0.65 ml boiling water, in ≈24 ml
alcohol at 25°. Most active at acid pH: Wolford, Andersen, Food Ind. 17, 622 (1945); Olsen,

Fungicide, mold preventative.
