Description and references

A byproduct of the wine industry. Prepn from wine dregs: Dabul, US 3114770 (1963 to Orandi & Massera). See also the processes mentioned under l-tartaric acid.

Properties

Powder. Slightly sol in water (from about 0.04% at 10° to about 0.2% at 85°) or in alcohol; sol in dil HCl or HNO3.

Use

As preservative for fruits, vegetables, seafoods; in deodorization of fish; as antacid.
